A decision support model simulating the vitamin supply over the year on a farm Organic Eprints
Mogensen, Lisbeth; Kristensen, Troels; Jensen, Søren K..
The aim of this new project is to develop a prototype of a decision support model simulating the feed and vitamin supply during a year to different groups of animals (calves, heifers, dry cows, cows in early and late lactation) on a farm self-sufficient with feed. The model takes into account that the content of vitamin depends on choice of crops, utilization method, cutting date, conservation method and duration of storage together with traditional optimizing the feed-ing scheme.

Alfa-tocopherol and beta-carotene in roughages and milk in organic dairy herds Organic Eprints
Mogensen, Lisbeth; Kristensen, Troels; Søegaard, Karen; Jensen, Søren K.; Sehested, Jakob.
The aim of the present study was to increase our knowledge about the vitamin content in roughage at harvest and during storage on organic commercial farms and to analyze the vitamin content in the milk. Roughages produced at the five organic dairy farms were monitored from harvest when the silage was laid in the silo and until the roughage was fed during the winter. The roughages had average α-tocopherol and β-carotene contents during the feeding period of, respectively, 30 mg and 21 mg per kg DM in grass-clover silage (after 281 days at storage), 13 mg and 8 mg per kg DM in maize wholecrop silage (stored for 194 days) and 28 mg and 9 mg per kg DM in cereal wholecrop silage (after 210 days from ensiling to feeding). The average daily intake of...

Animal health and nutrition in organic farming Organic Eprints
Vaarst, Mette; Weisbjerg, Martin Riis; Kristensen, Troels; Thamsborg, Stig Milan; White, Andrew; Roderick, Stephen; Lockeretz, Willie.
Animals are important in organic farming systems, both as a part of the concept and in practice, where there is great weight on forming an integrated system with harmony between the land, the animals and the people, involving local recirculation of feed and manure. Good animal health and welfare is an important goal for organic husbandry. In contrast to crops, animals are not just parts of the farming system, they are also sentient creatures and as such they deserve special moral consideration. They are individuals that need to be cared for, they can suffer, and they can interact with each other and with the humans and environment around them. Animal management is, therefore, very different from crop management. Humans have a moral obligation to treat...

Bedriftens økonomi, produktivitet og ressourceforbrug ved forskellige strategier for selvforsyning med foder Organic Eprints
Mogensen, Lisbeth; Kristensen, Troels.

BRIDGING THE GAP BETWEEN FARMERS AND CONSUMERS: VALUE CREATION AND MEDIATION IN “PASTURE-RAISED BEEF” FOOD NETWORKS AgEcon
Bedoin, Florence; Kristensen, Troels; Noe, Egon.
The aim of this article is to explore how different quality dimensions (safety, aesthetics, ethics and rooted ness) are created in food networks; how these qualities are transferred until the consumers; and how this process is supported by the organisation of the food network. Our postulate is that combining the quality and organisation dimensions and exploring the link between them will provide an interesting perspective for improving the sharing of values in food networks. This framework is applied to five case studies of “pasture-raised beef” food networks in France, representing a diversity of organisations such as public label scheme, cooperate owned brand and direct sell from farmer to consumer. The results highlight the importance of the role of...

Carbon footprint from cheese produced on milk from Holstein and Jersey cows feed hay differing in proportion of herbs Organic Eprints
Kristensen, Troels; Søegaard, Karen; Eriksen, Jørgen; Mogensen, Lisbeth.
The objective of the study was to assess the impact on emission of green house gasses (GHG) from production of cheese based on milk from different type of hay and breed of cows, and as an integrated part to give figures for emission from production of hay in climate lees favorable for on field hay drying. Emission of GHG was estimate using life cycle assessment with kg of milk and kg of energy corrected milk (ECM) delivered to the dairy factory, and kg of cheese at the retailor level in Denmark as functional units. Allocation at farm gate, between milk and meat, was made by biological relation between energy requirement to milk and meat production or economic allocation and at the dairy between cheese and whey using either economic allocation or system...

CLA-indhold i komælk Organic Eprints
Refsgaard Andersen, Henning; Sejrsen, Kristen; Sørensen, Martin Tang; Kristensen, Troels; Straarup, Else Marie.

Content of fatty acids, vitamin E and carotenoids in milk and herbage as affected by sward composition and period of grazing Organic Eprints
Larsen, Mette Krogh; Fretté, Xavier C.; Kristensen, Troels; Eriksen, J.; Søegaard, Karen; Nielsen, J.H..
The quality of organic milk is affected by feed composition, and especially the high use of legumes has been identified as the reason for high levels of polyunsaturated fatty acids, carotenoids and tocopherols in organic milk. Four different pastures composed of mainly white clover (WCL), red clover (RCL), lucerne (LUC) or chicory (CIK), respectively, were established to investigate the influence of sward composition on the milk quality of grazing cows. On three occasions during the grazing period (May, June and August), groups of 12 Holstein cows were grazing the pastures for two weeks. About 70% of the daily dry matter intake was pasture, and the remaining dry matter intake was a mixture of oats, hay and minerals (82%, 16%, 2%, respectively). The...

Cows fed vitamin-rich feed produce vitamin-rich milk Organic Eprints
Mogensen, Lisbeth; Kristensen, Troels; Jensen, Søren K.; Søegaard, Karen.
On five organic dairy farms there was a positive effect of a high vitamin content in the home-grown roughage on the vitamin content of the milk produced. Vitamins and minerals are of crucial importance for the health and performance of the animals, and they also affect the nutritional value of the products. The highest concentrations of pro-vitamin A (in the form of beta-carotene) and vitamin E (alfa-tocopherol) are found in grass, legumes and other green plants, while seeds and whole-crop silage only contain small amounts of vitamins. While the requirements for for fat-soluble vitamins of grazing cattle are normally met via their intake from pasture, the supply of fat-soluble vitamins may decrease to very low amounts when conserved herbage is used...

Dairy cow defecation and urination frequency and spatial distribution in relation to time-limited grazing Organic Eprints
Oudshoorn, Frank; Kristensen, Troels; Nadimi, Esmaeil.
The objective of this paper was to investigate the effect of limited grazing time on urination and defecation frequency, spatial distribution of excrement in the paddock, and the resulting nitrogen balance at animal and field level. During a 6-week period in early summer, 60 Holstein Frisian dairy cows (31.0±5.4 kg ECM) were randomly allocated to three different treatments, with grazing at clover-grass pasture during daytime for 4, 6.5 or 9 h daily. Indoor feeding, with a mixture of roughage and concentrates (13% crude protein), was restricted for treatment 4 and 6.5 h to the amount the 9-h treatment could eat. Cows allowed grazing at pasture for 4 h moved more rapidly during pasture, moved longer distance per active hour and used a higher proportion of...

Developments in greenhouse gas emissions and net energy use in Danish agriculture - How to achieve substantial CO2 reductions? Organic Eprints
Dalgaard, Tommy; Olesen, Jørgen E.; Petersen, B.M.; Petersen, Søren O.; Jørgensen, Uffe; Kristensen, Troels; Hutchings, Nicholas J.; Gyldenkerne, Steen; Hermansen, J.E..
Greenhouse gas (GHG) emissions from agriculture are a significant contributor to total Danish emissions. Consequently, much effort is currently given to the exploration of potential strategies to reduce agricultural emissions. This paper presents results from a study estimating agricultural GHG emissions in the form of methane, nitrous oxide and carbon dioxide (including carbon sources and sinks, and the impact of energy consumption/bioenergy production) from Danish agriculture in the years 1990-2010. An analysis of possible measures to reduce the GHG emissions indicated that a 50-70% reduction of agricultural emissions by 2050 relative to 1990 is achievable, including mitigation measures in relation to the handling of manure and fertilisers,...

Effect of barley or rape seed cake as supplement to silage for high-yielding organic dairy cows Organic Eprints
Mogensen, Lisbeth; Kristensen, Troels.
An experiment was carried out to investigate the effects of barley or rape seed cake as supplement to silage given ad libitum on milk production and health of dairy cows. A total of 103 cows were divided into two groups on two farms. Before the experiment, the cows had an average milk yield of 26.9 kg ECM and they were in milk for an average of 99 days. Their average parity was 2.3 and their weight 596 kg. The cows in each group received either solely barley or an isoenergetic mixture of rape cake seed and barley as supplement. The supplement feed was fed frequently by automatic feeding. A mixture of clover grass silage and whole crop silage was fed ad libitum. The daily milk yields were not significantly different in the barley and rape seed cake...

Effect of concentrate supplementation level on production, health and efficiency in an organic dairy herd Organic Eprints
Sehested, Jakob; Kristensen, Troels; Søegaard, Karen.
The proportions of organic feed and roughage in the feed ration for organic dairy cows have to reach 100 and 60%, respectively, in 2005. The aim of this study was to elucidate the long-term effects of reducing or omitting concentrate supplementation to high genetic merit dairy cows on a basal ad libitum diet of clover-grass (silage and grazing). Three concentrate levels, N, L and L+ (38, 0 and 19% of dry matter (DM) intake, respectively) were investigated in a herd of 60 cows during 3 years. The production in group N was 6723 kg energy corrected milk (ECM) per cow year, based on an intake of 6226 kg DM of which 38% was concentrates. In group L the omission of concentrates reduced intake to 4770 kg DM, and milk production to 5090 kg ECM per cow year. Milk...

Effect of dairy management on quality characteristics of milk Organic Eprints
Slots, Tina; Leifert, Carlo; Butler, Gillian; Kristensen, Troels; Nielsen, Jacob Holm.
The objective of the study was (i) to compare the nutritional composition of milk produced in organic and conventional production systems taking into consideration: different proportions of grass or grass silage, maize silage and different amount of concentrate (cereals), and (ii) to define the variation in content of pro- and antioxidants in milk in relation to regional variation, feeding and season. The feeding regime from 25 farms from Denmark, 20 farms from Sweden and 25 farms from United Kingdom was reg-istered and milk samples were collected and analysed for the content of antioxidants and fatty acid compo-sition. The daily milk production was significantly higher in the conventional milk production systems in the two Scandinavian countries compared...

Effect of grazing white clover pasture on milk composition of Holstein and Jersey cows Organic Eprints
Fretté, C.; Kristensen, Troels; Eriksen, J.; Søegaard, Karen; Sørensen, John; Wiking, L.; Nielsen, J.H..
Because of its high saturated fatty acid (FA) content milk fat is considered hypercholesterolemic. Intake of unsaturated FA (UFA) reduces the plasma cholesterol concentrations. Especially conjugated linoleic acids (CLA) have shown positive effects on cardiovascular diseases, prevention of cancer and obesity. The aim of our project is to investigate how grazing can enhance the content of these beneficiary FA in milk. For bith types of cow races we observed no direct effect of increased grazing in the diet on the short chain FA (SCFA) content in milk, implying that the de novo synthesis of these FA remained unaffected. Regarding the content of CLA c9,t11 there was a strong positive effect on Holstein milk (R2 = 0,88), but almost none on Jersey milk when the...
